Marinara Sauce

I had a feeling that the weather wasn't going to stay nice for long.  But we had a nice break last weekend with it being in the low 60s and sunny.  Now we are getting more snow.  :(  I decided to make something comforting.  Tonight we will have Spaghetti and Meatballs.  But first, to make Marinara Sauce.

Marinara Sauce

3 tbsp Olive Oil
1 medium Onion, chopped
6 cloves of Garlic, minced
2 tbsp Red Wine
1 (28-ounce) can Crushed Tomatoes
1 tbsp fresh or 1 tsp dried Oregano
1 tbsp fresh or 1 tsp dried Basil
1 tbsp fresh or 1 tsp dried Parsley
Pink Salt & Pepper to taste

Currently, I've run out of fresh herbs, so resorting to dried herbs since my local grocery is out of stock.  Use what you have, obviously.



Over medium heat, sauté onions for 3 to 4 minutes.  Add garlic and sauté for another minute.  Add the red wine and deglaze the pan.  Add the tomatoes and herbs.  Turn the heat to low, cover, and simmer for 30 minutes.


Serve over the pasta of your choice and enjoy!
