Ham and Broccoli Quiche

The wonderful thing about this quiche is that it can be made up two days ahead of when you plan on serving it.  First off remain calm, quiches are really easy to make.  Once you make your first one, you'll probably be showing them off to all your friends.




Ham and Broccoli Quiche

2 Eggs, 4 Egg Yolks
1 Cup Half and Half
1 Cup Whole Milk
1/2 tsp Pink Salt
1/2 tsp Black Pepper
1/4 tsp Thyme
1/4 tsp Freshly Grated Nutmeg
1 cup Gruyére Cheese
1/2 cup Broccoli Florets, cut up into bite size pieces
1/2 cup Ham, diced

Make to make the Savory Pie Crust in a tart shell or whatever pie crust you prefer.  


Preheat the oven to 325 degrees.  In a medium bowl whisk together eggs and yolks, half and half, milk, salt, pepper, thyme and nutmeg.  Set aside.  Grab a baking sheet and place it under your tart pan.  Evenly distribute Gruyére, broccoli and ham over the bottom of the pie crust.  Pour the custard over the crust.  The egg mixture will fill the crust up to the top.  Which is why I placed the baking sheet under the tart pan, to prevent spills.


Bake 50-55 minutes.  Quiche will be puffy and should be golden brown on the top.  To check if it is down, jiggle the pan, it shouldn't slosh when it's done.  


Let it cool for 45 minutes.  Cut it up into eight pieces and enjoy!
