Tuna Croquettes
My family tries to eat fish at least twice a week. The hardest thing I've found is keeping enough variety so it doesn't seem like we are eating the same recipes over and over again. Over the years, I've learned several different recipes, and the best advice I can offer is to try recipes outside of your comfort zone. If you have a Chinese recipe last time, try an Italian one this time. So I decided it was time to post another fish recipe.

Tuna Croquettes
1 7oz can of Tuna, drained and shredded
2 Green Onions, sliced
2 Eggs
3/4 cup Panko Bread Crumbs
Juice From Half a Lemon
1 tbsp Fresh Parsley
1 tbsp Fresh Parsley
2 tsp Dijon Mustard
1/2 tsp Pink Salt
1/4 tsp Black Pepper
Olive Oil for frying
Serve with Tartar Sauce
In a medium bowl, combine all of the ingredients.
Heat a skillet with about a tbsp of olive oil over medium heat and form the tuna mixture into 2-inch balls. Arrange in a skillet and use your spatula to press the balls flat.
Cook for about 2-3 minutes on each side.
Drain on a paper towel.
Serve with Tartar Sauce and enjoy!
