Carrot Ginger Soup

So I had mentioned in Lemonade Cleanse that Will hasn't been feeling himself lately.  It looks like we didn't catch his cold quick enough.  He's still using the Maple Syrup Lemonade.  Now it looks like it's turning into a head cold.  I'm determined to nip this in the bud before he gets really sick.  So to help fight the nasty bug I decided to make some of my Carrot Ginger Soup.



Carrot Ginger Soup

3 tbsp Olive Oil
1 Onion, chopped
3 Cloves Garlic, minced
5 Green Onions, sliced
2 lbs Carrots, roughly chopped
1 inch of Fresh Ginger Root, minced
5 cups Chicken Broth

Heat oil in stock pot over med-low heat.  Add onions and cook for 2 minutes.  


Add carrots and cook for another 7 minutes.  


Next add the garlic, green onions and ginger and cook for another minute.  


Add chicken broth and bring to a boil.  


Reduce temp to low, cover and simmer for 20 minutes. 


Liquidize with a blender.  


 This soup is wonderful hot, but it's also amazing in the late spring or summer served cold.


This soup goes really well with a Grilled Turkey and Swiss Sandwich.



Good soup is one of the prime ingredients of good living.  For soup can do more to lift spirits and stimulate the appetite then any other one dish.
