Swiss Fondue
This is actually one of Jaiden's favorite things to eat. He's been wanting to have this for a while. It's so easy to make I thought why not. So for family night we decided to have a carpet picnic with swiss fondue, carrots, celery, bread and several of our favorite movies.
Swiss Fondue
1 cup of Chicken Broth
1/2 cup of White Wine
1 tbsp Lemon Juice
3 tbsp Unbleached Flour
2 Eggs
1 clove of Garlic, minced
1/4 tsp Pink Salt
1/8 tsp White Pepper
1 lb of Swiss Cheese, cubed
French Bread
Vegetables of your choice.
First cut up your vegetables and bread.
In a medium pot whisk together chicken broth, white wine, and lemon juice. Add flour and whisk till smooth.
Make sure there aren't any lumps. Heat mixture over medium heat.
Beat eggs in a small bowl.
Slowly add a small ladleful of the broth mixture to the eggs. Whisk while tempering the eggs. Tempering basically means you're bringing the eggs up to the temperature of the broth without scrambling the eggs.
Add the egg mixture back to the pot. Add the garlic, salt and pepper.
Add the cheese. Continue whisking till smooth. I buy my swiss cheese from a local deli. I have them deli slice it, like you would have it on sandwiches, so when I cube the cheese and add it to the mixture, it's completely melted in only a couple of minutes.
Should look like this when completely melted.
Grab your bread, vegetables and forks and enjoy!
Life is great, cheese makes it better.
