Blood Orange and Ginger Snack Cakes

When I was trying to lose weight, I used to buy those Weight Watchers snack cakes that were under 100 calories.  But they have a very overly processed flavor and texture.  Not to mention all of the preservatives in them.  Also, they never had flavors I really wanted.  So I came up with my own snack cake that is under 100 calories.  Yes, it even has frosting!

Blood Orange Ginger Snack Cake

1/2 cup Raw Sugar
1/2 cup of Butter, softened
1/2 cup of Molasses
1 Egg
Zest & Juice of a Blood Orange(if you can't find use a regular orange)
1/2 tsp Ground Ginger
2/3 cup Whole Milk
The frosting recipe is at the bottom. 

Preheat oven to 350 degrees.  Grease a Jelly Roll Pan(15 1/2x10 1/2x1).  Cream the sugar and butter together in a medium-sized bowl.  Add molasses, egg, vanilla, and a tbsp of blood orange juice.


In a small bowl, mix the flour, baking soda, ginger, and cinnamon together.  Alternatively, add this mixture and the whole milk to the first bowl with the wet ingredients.



Stir in 2 tsp of orange zest and the candied ginger.


Spread out on a large pan.


Bake for 15-20 minutes.  Let it cool at least 30 minutes before frosting.


Blood Orange Frosting

2 tsp Butter, softened
1 tsp Blood Orange Zest
2-3 tbsp Blood Orange Juice
1 tbsp Half & Half

Add all of the ingredients to the mixer and beat till smooth.  Frost the top of your cake.


Cut into 8 rows by 6 rows.  Enjoy!
