Planning an Easter Menu


Great themes for Easter are carrots, eggs and of course rabbits.  Now that Jaiden is older I tend to decorate for Easter less and less then I use to.  This year we thought it would be fun to have a picnic for brunch.  Jaiden may not be out hunting down eggs anymore but it's still fun to go outside and enjoy the beautiful Spring flowers.

So I'm planning a brunch menu and a light dinner menu.  We've noticed during the holidays it is the worse time to gain weight and so we wanted to keep things a little lighter this year yet still have a wonderful feast.

Mead

Mead is a drink I feel can be served with any dish, from rich stews to light cheeses and fruits.  I know some wine purist would say to serve it like other sweet wines to cut heat or intense spice.  I believe Mead is just in a category of it's own and can be served with anything.  Besides it will compliment the sweetness of the chicken and highlight the tart yet sweet flavor of the vinaigrette.
