Ham Stuffed Biscuits with Mustard Butter
I made biscuits for Easter Brunch. The most important thing is making really good biscuits.

Homestyle Biscuits
1 3/4 cups Unbleached Flour
4 tsp Baking Powder
3/4 tsp Pink Salt
1/4 tsp Baking Soda
1 cup Whole Milk
2 tbsp Chilled Butter, diced
2 tbsp Coconut Oil
1 tbsp Lemon Juice
Preheat oven to 450 degrees. In a large bowl, mix your flour, baking powder, salt, and baking soda together.
Add the milk and mix till just combined. You really don't want to overmix biscuit dough, or it will turn out flat and tough. But the milk needs to be combined with the flour mixture so it doesn't curdle when you add the lemon juice. Add the butter, coconut oil, and lemon juice.
On a floured surface, turn out the dough and sprinkle more flour over the top of it. I pat the dough down and make it as flat as possible before using a small juice cup to cut out round biscuits.
Place them on a baking sheet.
Bake for 10-12 minutes or until the biscuits are golden brown.

Mustard Butter, recipe follows
To make sandwiches, carefully cut your biscuits in half. Use the mustard butter to butter both sides. Take a slice or two of deli-sliced ham and place it on the biscuit. Add the top and you're done. These are perfect for brunches or used as tea sandwiches.
Mustard Butter
6 tbsp Butter, softened
2 tbsp Honey Mustard
In a small bowl, combine ingredients.
Sandwiches are wonderful. You don't need a spoon or a plate.
