Tomato Juice + Bonus Bloody Mary Mix Recipe

I ended up with so many tomatoes in my rescue produce box this time that making homemade tomato juice felt inevitable. While reading labels, I noticed that some store-bought versions include celery and onions—so I figured, why not make my own? This batch is simple, fresh, and full of flavor, and it’s also the base for my Bloody Mary mix.

With the Super Bowl coming up, I always make sure to have my favorite hangover cures on hand. Whether you’re cheering for the Seahawks or… the team known for cheating, it’s good to be prepared.

 

Tomato Juice

3 lbs of ripe tomatoes, cored and chopped

2 stalks of celery with leaves, chopped

1/2 an onion, chopped

pinch of fennel seeds

1 tsp pink salt

black pepper to taste

Louisiana hot sauce to taste, mine has about 3-4 good shakes in it.

Put all the ingredients in a large stock pot and bring to a boil.  Turn the heat down to medium heat and continue cooking at a low boil for 25-30 minutes.  I use my immersion blender to blend everything up.  Then press the mixture through a fine-mesh strainer.  This mixture can be canned, or it lasts about a week in the fridge.


Bloody Mary Mix

 4 cups of tomato juice listed above
1/2 cup prepared horseradish
juice of a lemon
1/4 cup Worchestershire Sauce
1/2 tsp garlic powder
1/2 tsp celery seed
1 1/2 tsp pink salt
1 1/2 tsp black pepper
1 1/2 tsp Louisiana hot sauce
Ice (optional)
1 1/2 cups vodka (optional)
Tajin to rim the glasses (optional)
Optional garnishes: pimento-stuffed olives, lime or lemon slices or wedges, celery stalks, carrot sticks, pickle spear, pickled asparagus, pickled green beans

Add the tomato juice, horseradish, Worcestershire sauce, garlic powder, celery seed, salt, pepper, and hot sauce to a blender.  Blend till smooth.  Some people serve over ice; I am not one of them.  I like Tajin rimmed around the glass.  I have also seen margarita salt-rimmed glasses.  Garnish with whatever you like.  I like a lime slice, a celery stalk, and pickled asparagus.  Have fun with it!
