BBQ Jackfruit Pizza

We were craving BBQ Chicken pizza.  But I live 45 minutes from the closest pizza restaurant.  Honestly, I wanted to see if I could make a vegetarian version of one of my favorite nontraditional pizzas.  If you don't want vegetarian, this is a great use for leftover shredded chicken.  To me, this feels like one of the best summer grilling pizzas.  The smoke of the grill seems to give the crust the smokiness it needs to complement the BBQ on top.

If you aren't familiar with using jackfruit as a meat substitute, it might sound weird. Jackfruit, when brined, loses its sweet fruit flavor. So you can then infuse whatever flavor you like into. I went with chicken for this pizza since BBQ pizza typically uses chicken. It also shreds just like chicken or pork, providing a texture that is impossible to mimic.

Preheat oven or grill to 450 degrees.  Follow the instructions above for the pizza dough(this includes prebaking the crust for 5 minutes before using) and the BBQ pulled Jackfruit.  To assemble, take your favorite BBQ sauce and pour as much sauce as you like on a pizza.  Use a spatula to spread the sauce around.  Divide your jackfruit into 3rds and spread that around the crust.  Next, add the sliced onions and pineapple.  I know some people hate pineapple on pizzas.  But this isn't a traditional pizza.  BBQ sauce is amazing with pineapple, especially grilled pineapple.  Add as much of the two cheeses on top.  I usually do a 50% mix of each type.  I know cheddar seems weird, but the flavor works really well with BBQ sauce.  Bake for 5 minutes and then broil until the cheese reaches your desired brownness.  I usually start with 2 minutes.  
Grilling a pizza takes the same time on a baking sheet, 5 minutes.  Make sure the temperature is still 400-450 degrees.  If you want to put the pizza directly on the grill.  It is usually done in 2-3 minutes.
