French Potato Salad
Most people are familiar with German or classic mayonnaise potato salad. I haven't really been to many BBQs or potlucks that have French Potato Salad. If you are familiar with German potato salad, they are similar in some ways, like both being hot salads that are vinegar-based. But that's where the similarity ends. The herbs, vinegar, and even the broth used are different. I promise, if you like the German style of potato salad, this is a salad that you will enjoy.

French Potato Salad
2 lbs. potatoes, cut into bite-sized pieces
3 tbsp Champagne vinegar
1/2 tsp Dijon mustard
2 tsp pink salt
3/4 tsp black pepper, ground
10 tbsp of a robust olive oil
2 tbsp dry white wine
2 tbsp chicken broth
1/4 cup minced onions
2 tsp dill weed, 2tbsp fresh
2 tsp parsley, 2 tbsp fresh
2 tsp basil, 2 tbsp fresh
2 tsp tarragon, 2 tbsp fresh
In a large pot, bring salted water to a boil. Add your potatoes and cook them for 10 minutes. Drain and let them sit for 10 minutes with a clean towel covering them. Meanwhile, in a blender, combine vinegar, mustard, salt, pepper, and olive oil. Set the vinaigrette aside. In a large bowl, add your potatoes, toss them with the white wine and chicken broth, and let them sit for 2-3 minutes to absorb. Add the onions, the vinaigrette, and the herbs. Stir and it's done.
The only thing better than a good meal is the company you share it with.
