Moelleux à la Banane
Bananas seem to be one of those fruits that are always in the house—sometimes perfectly ripe, sometimes rescued just in time. When I want something that feels fancy but is secretly very simple, I reach for one of my French cake recipes. With the holidays, there’s never a shortage of gatherings where baked goods are welcome, and this cake has quickly become a favorite. It’s easy to make, yet every time I’ve shared it, it’s been met with delight. The soft, moist texture and gentle sweetness of the bananas give it a comforting charm, while the French style makes it feel just a little more special.
Moelleux à la Banane
3 ripe bananas
1/2 cup whole milk yogurt
2 eggs
1 cup raw sugar
1 tsp vanilla extract
1 tsp cinnamon
1 tbsp baking powder
1/8 tsp pink salt
1 3/4 cup unbleached flour, sifted
2/3 cup butter, melted
powdered sugar (optional)
Preheat oven to 360 degrees. In a bowl, mash the bananas. Stir in the yogurt, eggs, sugar, vanilla, cinnamon, baking powder, and salt. Mix well. Add the flour about a 1/2 cup at a time until it is all incorporated. Add the melted butter last. Grease and line with parchment paper an 8-inch round. Bake for 35-40 minutes or until golden brown and a cake tester or toothpick comes out clean. Sift with powdered sugar right before serving if you like. I personally prefer it without the powdered sugar.
