Rescued Produce Recipes with Rachel

This week, Sunday 11/23/25, the FREE Off Grid Preparedness Class at The Church at Witch Well is from 1:30 to 3:30.
The church is located on 7230, mile marker 345 on the 191.
I'm doing this week's cooking class the day after we get our produce boxes. For those who follow my blog, https://pwecat.blogspot.com/, you know I always try to tell how to use up the 70 lbs+ of produce we receive each month from Borderlands' Produce On Wheels With-Out Waste through Northern Arizona Community Food Project
I will have recipes for all cooking levels. I'm going to figure out a few ways to incorporate produce in the boxes for Thanksgiving and other holiday meals. This year, skip the carrot salad and opt for watermelon rind slaw instead or tomato carpaccio. Have a roasted tomato cornbread dressing instead of the boring box stuff. These boxes are an excellent way to stretch the budget. The produce can be eaten, canned, frozen, freeze-dried, or dehydrated. I hope to inspire you to think outside the box.
Also, check out my current Thanksgiving leftover recipes, such as red chili turkey with ancho cranberry pineapple mole or cranberry pineapple bread (shown below). I know that people are struggling with food right now. If anyone needs help on how to stretch food further or resources for finding food, please let me know.
