Blueberry Balsamic Vinaigrette

 I keep buying blueberries without checking how many I have.  Which is fine, blueberries are an amazing superfood.  They have the highest level of antioxidants of any other fruit.  They can lower blood pressure, improve memory, help regulate blood sugar, and have anti-inflammatory properties.  Besides, they taste delicious.  This is one of my favorite salad dressings.  It has the perfect blend of tangy and sweet.

Blueberry Balsamic Vinaigrette

1 cup of fresh blueberries
4 tbsp olive oil
1 tbsp honey
1/2 tsp pink salt
1/4 tsp dried thyme
1/8 tsp onion powder
1/8 tsp black pepper, ground

Toss all the ingredients in the blender and blend until smooth.  Refrigerate until use.  This vinaigrette goes really well with mixed greens, sliced cucumbers, toasted walnuts, and feta cheese.

Bonus:  This vinaigrette is awesome as a marinade on really any type of meat.
