Mango Carrot Orange Smoothie

Creating this for those wanting the mango, carrot, and orange smoothie from the list.  When I was in high school, I was addicted to orange carrot juice.  I know it's odd, especially growing up in the home of Starbucks.  Pfft, my favorite coffee house was Tully's.  My mom kept telling me I was going to turn orange the way I kept drinking the juice.  It is possible, but thankfully, I never turned orange, or it probably would have ended my face modeling.  I remember one of the first dates I went on with my husband.  He surprised me by buying me orange carrot juice and a pink frosted sugar cookie.  My two favorite things at the time.  I never said a word, figured he was a keeper for being so observant.  Or maybe I really did always have a bottle of orange carrot juice in my hand...

I like to make smoothies the night before that require juicing and put them in the fridge for breakfast.  Then the next morning, I just need to add ice to my blender cup, blend, and walk out the door.  I used to have a really nice juicer that my mother-in-law gave me.  Unfortunately, it was a complete nightmare to clean, so I gave it away in one of my moves.  Now I just use my blender and a strainer.  It's still easier to clean than my old juicer, as crazy as that sounds.  If you have a juicer, feel free to use it.  I just like this way better.

Mango Carrot Orange Smoothie

4 mangos
4 large carrots, peeled and roughly chopped
2 navel oranges
1 16.9 oz can of coconut water
1 tbsp lime juice
2 cups of ice
2 scoops of collagen powder(optional)
sweetener (optional)

Makes 4 smoothies.

So, this isn't orange carrot juice, but with the produce boxes, I'm trying to use up mangos as well.  I start by blending the carrots with the coconut water.  I strain out the pulp.  I split the pulp between my dog and my chickens.  They absolutely love this.  Add the carrot coconut water to the pitcher.  Next, I blend up the mangos and add them to the pitcher.  I have a small Ninja blender, which is awesome for individual smoothies, but it makes me have to blend things in batches for multiple servings.  Juice the oranges with a citrus juicer.  I add this with the lime juice to the blender to blend up my collagen powder.  The collagen is optional, but I like how it adds a subtle creaminess and froths up the smoothie.  It kind of reminds me of an Orange Julius, except that the collagen is replacing the egg whites.  I don't like super sweet smoothies, add your preferred sweetener if you think the smoothie needs it.  Otherwise, store in the fridge until you are ready to add ice and blend.
