Yogurt Parfaits in Waffle Cups


 I considered just adding this to my pancake/waffle recipe since it uses the same batter.  I think that would make that post too long.  Two Saturdays ago, Will and I went to the Saint Johns community yard sale.  We found this waffle cup maker for $5.




I have had my eye on this waffle cup maker on Amazon.    I just couldn't justify the $37 when I have a regular waffle maker.  Yes, I know during Cyber Monday, this regularly goes 50% off.  I really want one now, lol.  When I saw this at the yard sale, I grabbed it and put it with my pile of stuff.  Since getting one, I keep seeing these at secondhand stores, so just be patient.  But now that I have it, I think it's definitely worth the price.

I was concerned this would take a special batter, but no, my regular pancake/waffle batter works perfectly.  It just comes out crispier like an ice cream cup.  I'll attach the link to the recipe below.  I was going to wait to post this with my Summer Watermelon recipes, which I am working on putting together.  I currently have a Watermelon Sherbet churning in my ice cream maker that would be awesome in these cups.  There is so much more that you can do with these than just ice cream cups.  Like use my corn bread batter (recipe below) and fill them with chili.  Omit the sugar in the pancake/waffle recipe and make mini taco salad cups (recipe below).  We decided to make yogurt parfait cups.

First, make all the waffle cups and set them aside to cool.  My Pancake/Waffle recipe should make 10.

Yogurt Parfaits In Waffle Cups

Waffle Cups
3-4 tbsp Whole Milk Yogurt (Kapha use oatmilk yogurt)
Fruit of your choice (I used blueberries)
1 tbsp Maple Syrup (Kapha use honey)
2 tbsp Granola*

I take one of the waffle cups and add about 1 1/2 tbsp of yogurt.  I top it with about a tbsp of fruit.  Add the remaining 1 1/2 tablespoons of yogurt and top with additional fruit.  Top with maple syrup and granola.

*A lot of books will say Vata and Pita can't have granola.  It's because it's drying, and the honey in it can cause Pitta to rise.  The easiest solution is just to mix your parfait and allow the granola to rehydrate with the yogurt.  Problem solved.  If you don't like soggy granola or don't want your body temperature rising from the honey, then just omit the granola and add toasted nuts instead.

With the recipes below, you could meal prep multiple meals.  Yogurt parfaits with different fruit, cornbread cups with chili, and taco salad cups using the leftover chili.
