National Pie Day


So today is National Pie Day...not to be confused with Pi Day, which is March 14th, lol.  We are just getting over another snowstorm, so I can't really head out to the store yet.  Here's what the storm looked like about halfway through.



Here's someone who hates going out in the snow.  It's probably not obvious, but she has two coats on.



So, without buying the supplies I would need for a pie.  I decided to make pecan pie bars instead.

Pecan Pie Bars

Crust:
1/2 cup of Butter, softened
1/2 cup of Brown Sugar

Filling:
1 Egg
3/8 cup Corn Syrup
3/8 cup Brown Sugar
1 tbsp of Real Maple Syrup
1/2 tsp Vanilla
1 cup of Pecans, chopped

Preheat the oven to 375 degrees.  Cream the butter and 1/2 of the brown sugar together.  Add the flour and mix till the dough forms a soft, crumbly mixture.  It should look like shortbread dough(basically what it is).


Take the dough and press it into a 9x9 pan.  Bake for 8-10 minutes or until the desired color is reached.


While it's baking, mix the egg, corn syrup, brown sugar, maple syrup, and vanilla together.  As soon as the shortbread crust comes out of the oven, pour the mixture over the crust and top with nuts.  Bake for 10-12 minutes.


You'll know it is done by jiggling the pan; the middle shouldn't seem like liquid.  Wait till it is completely cool before cutting up.


When you die, if you get a choice between going to regular heaven or pie heaven, choose pie heaven.  It might be a trick, but if it's not, mmmmmmmm, boy.
